Easy Cilantro Rice Bowls

2 Servings
1 tsp olive oil
1 tbsp chopped onion
1 tsp minced garlic 
1 c. Basmati rice
1/2 tsp salt
1 tbsp cilantro
1 lime
1/2 chopped tomato
1 avocado sliced
1 1/2 c. Sweet corn (we use frozen organic corn)
1 can of black beans Feta cheese  

Set stove top to medium heat. Heat olive oil in a pot then add onion and garlic, cook for 5 min (or until aromatic). Add rice and coat with oil, onion and garlic. When edges of rice have slightly browned add 2 cups of water and 1/2 tsp salt. When water reaches a boil turn heat down to low and cover. Simmer until rice is cooked.   Remove rice from heat and place in colander. Rinse with warm water. Place back into pot and add 1 tbsp cilantro and the juice of 1/2 lime then mix.  

All the while you've been warming your beans and corn (not in the microwave, obviously).    Add your rice into a bowl then finish off with your toppings (to make this a vegan dish simply don't add the feta).    Rice bowls are awesome because you can mix up the toppings and make it your own. We like to squeeze a little extra lime and sprinkle with a bit more sea salt. I think next time we will even try some salsa on it!

Easy Morning Oats

1 SERVING 
 
1/4 c. Steel Cut Oats
1/4 c. Almond Milk
3/4 C. Water
1/2 Tsp Coconut Oil
 
Toppings: 
Maple Syrup (or your choice of sweeter)
Chia Seeds
Hemp Seeds 
Almond Butter
Unsweetened Coconut Flakes
Raspberries & Blueberries
Almond Milk
 
Melt coconut oil in small pot, add oats and coat with the coconut oil. Add water and almond milk then simmer until cooked. 
 
Add to bowl then add your toppings.

Acai Bowls in the morning, Acai Bowls for dessert!

A few days ago I made a delicious Acai Bowl. I don't know if it tasted so good because it was "that time of the month" or simply because it was just delicious. 

I choose the latter.

Acai bowls are a perfect breakfast smoothie to start off your day because of all the great benefits acai berries carry.  I like to think that Acai bowls are the equivalent of Ice Cream Sundays because you're stacking up a delicious bowl of frozen yumminess so they are also perfect as a dessert plate.

In case you didn't know much about Acai Berries, they are an Amazonian superfood. Acai berries are packed with antioxidants, amino acids, protein and omega fatty acids. This means that Acai Berries boost your energy, boost metabolism, make your immune system stronger as well as aid in making your skin and hair feel and look much nicer.

So here is my Acai Bowl.

You'll need:

Sambazon Acai Berry Smoothie Packs


Frozen (or fresh) Organic Blueberries


Raw Organic Chia Seeds


Organic Raw Agave Nectar


Vanilla Spiru-tein Protein


Pumpkin Flax Granola


Coconut Flakes


Blend a single Acai Smoothie Pack along with, a scoop of the Vanilla Spiru-Tein Protein Powder, a good squeeze of Agave Nectar (optional) and 1/2 tablespoon of Chia Seeds you want a nice smooth thick consistency like runny ice cream. 

Pour into a bowl and top off with the Pumpkin Flax Granola, more blueberries, coconut flakes and drizzle off with a little more agave nectar and...


VOILA!


The ingredients always vary in my bowl; honey, raspberries, strawberries, bananas, almond milk, bee pollen, flax seeds, etc. Acai Bowls are versatile and you can make them your own!
